About homemade liqueurs and alcohol used in their preparation

We are glad that our recipes for cherries, blueberries, apricots, cherries or raspberries are so popular among our readers! You will find their recipes at the end of the article.

They do not contain the messages that thank us for the recipes. Everyone is very happy that, finally, the sour cherry does not smell of brandy, that the blueberry is ruby and has blueberry flavor, that the liqueurs do not "stink" and that they will never use another recipe. We are very happy, dear ones, that you have discovered that an indefinite brandy or a brandy has nothing to do with a fine liqueur. The alcohol used must be neutral so as not to cover the taste of the fruit. Otherwise we will only get a vagina with a vague aroma of cherries, blueberries or in this case, roses and from which we have all the chances to hurt our heads.

Fine liqueurs are made with double refined alcohol or vodka because these two are neutral in terms of smell and do not interfere with the main ingredient: mint, raspberries, cherries, sour cherries, quinces, etc. - I leave the recipes at the end. Vodka and commercially refined double alcohol are made from cereals or potatoes, so they are also natural. A fine homemade liqueur must have an alcoholic strength between 22 and 30 degrees.

Your words of thanks and praise made us prepare this delicate and fragrant rose liqueur. I don't even want to know what horror would come out if I put brandy, brandy or even brandy in this delicacy. These homemade drinks are consumed as such, they do not mix with anything else.

The recipe for homemade rose or rose liqueur is extremely simple and is based on rose petals, vodka and a sugar syrup. We do not advise you to use honey because it ferments, in addition to covering the aroma of roses and changing the taste of liqueur.

Preparation

Before cooking, keep the dough at room temperature until it can be easily processed. Sprinkle a little flour on the work table and roll out the puff pastry dough so that it is about 2 mm thick. Cut strips about 25 cm long and 5 cm wide.

In a bowl, mix lemon juice with rum and cinnamon.

Wash the apples, cut them in half, remove the seeds and remove the stalks. Cut the apples into semi-round slices as thin as possible and add them to the rum and lemon mixture (lemon helps the apples not to oxidize).

Preheat the oven to 180 ° C (ventilation baking / convection function).

Place the slightly sliced apple slices on the edge of the dough strips so that the red part is out. Cover the apples with the bottom half of the dough and press lightly over the entire surface. Roll carefully, as tightly as possible, from one end to the other, resulting in puff pastry roses and apples.
Place each prepared rose in a muffin tray lined with special muffin / muffin paper.

Bake in the middle of the oven for about 20-25 minutes, until the roses are lightly browned on top. Serve immediately plain or powdered with sugar, as desired.

You can virtually browse the pages of our site, choose a sweet gift and prepare it 2 days in advance. We are sure that you will choose to your liking but also that of your partner.

If you are a beginner in cakes, it would be good to choose a light dessert, simple to prepare but enough to surprise (pleasantly) your partner. We recommend: liquid chocolate with strawberries, fruit skewers, a lemon soufflé, pancakes or even a fruit salad. If they are too heavy for you, we suggest you reinvent the common breakfast sandwich. Prepare the sandwich as you usually do, and after you finish it, use a cookie cutter (a heart) and cut it out. Place one or two such mini sandwiches on a plate and sprinkle 2-3 rose petals.

Rose water. not just in sweets

Both petals and rose water are common ingredients in various delicious dishes. Both give a subtle floral note. Some spice blends or tea mixes also contain rose buds, such as Ras El Hanout. This is a Moroccan blend containing nutmeg, cinnamon, turmeric, pink pepper, ginger, cloves and, fragrant rose petals. Also, in several countries in the Middle East, rose petals are added to the Baharat recipe, another mixture of very aromatic spices, with a composition that varies from one country to another.

Roses and sweet sachets

These biscuits are prepared according to a classic recipe from the 80's, which I prepared, being a young housewife. I haven't prepared them for years and now, flipping through my recipe books, I came across them. It is a sweet that we could enjoy with our loved ones every day. Crispy and tasty.

Dough ingredients: 250 gr. Sour cream, 4 yolks, 300 gr. Margarine or lard. (in the 80's margarine was often used in pastry, now you can replace it with butter), 20 gr. yeast, 2 sachets of vanilla sugar, flour as much as it contains.

Filling: 4 beaten egg whites with 100 g of sugar, 1 glass of walnut kernels, 1 glass of sunflower seeds.

This dough does not require special preparation, only that the ingredients must be from the chamber. We put the ingredients in a bowl, we mix them, we add flour and we knead well, well the dough until the crust will be a smooth and elastic one.

Cover the dough with a towel for 10 minutes. To rest.

Divide the dough into two parts. We spread the first dough cake the thickness of the cake for the dumplings.

We put the filling and shape the biscuits giving them the desired shape. I shaped them into sachets and a rose. We do not fold the strip like the pies to the end, but only 3 times, after which we separate the biscuit.

Shaping roses: we put the filling and gather the sheet in the form of a roll. Then cut it into small pieces and place them in the tray lined with baking paper in an upright position. Not to be scared by the soft consistency of the uncooked biscuit, in the oven it recovers and bakes nicely. (see also attached photo).

We put the biscuits in the preheated oven in time, t.180 gr. On 35-40 min. Until they brown nicely. They cool a little and we powder them. Roses may need 5-10 minutes. more baking because they are thicker compared to the sachets.

Recipe for puff pastry roses with ham and cheese

For today's snack, I used, in addition to the classic puff pastry, ketchup, thin slices of smoked ham and grated cheese.

All the ingredients were combined in a perfect harmony of tastes. The cumin, which I often use for such snacks, was missing. But you can also add seeds: sesame, poppy seeds, especially sprinkled at the end. I did not set because the requirements were so, to be simple. If I made them just for myself, I would fill them with cumin, my favorite spice.

The recipe is simple, even a beginner in the kitchen can do it. That's why I decided to upload it on the blog as well. But also because we really like it and we prepare it very often.

If you have time and choose to prepare the dough at home, see here my puff pastry recipe.

It is not difficult to prepare, it just requires a little waiting time.

And if you find your taste in the recipes on the blog, you can also follow them on the Facebook.

I am waiting for you with culinary surprises and on Instagram and on Pinterest or Twitter.

Fluffy cheeses or lap-in-the-waist traditional recipe explained step by step

Fluffy cheeses or lap-in-the-waist traditional recipe explained step by step. Cheese recipe (branzoici) or lap in the Moldovan belt is very simple. Yeast dough with vanilla cheese filling with raisins. How they are made aromatic cheeses, powdered with sugar, fluffy dough and creamy filling.

I have the first memory of these fluffy cheeses from the sea. I was a child of about 4-5 years. I used to go to Constanta with my grandparents every year, my grandmother had a friend there and I stayed with her. I remember that all kinds of street vendors came to the beach, either with pictures and a playful monkey, or a barefoot uncle with a tray hanging around his neck, full of cheese powdered with sugar. And he shouted loudly, praising his fresh and vanilla merchandise. He called them & # 8222branzoici & # 8221 (sic!) Although in DEX they are called branzoaice.

I didn't miss the opportunity to buy one either. He offered it to me in a tiny sheet of paper, almost transparent. We eat with cheesy appetite after hours of sitting on the beach and in the water. Every day I followed him and kept the pennies ready when he came, so I could rush through the crowd to get a cheese. Of course, I also made cheese at home, but the ones from the sea had a special charm.

Cheeses are made everywhere, not just in our country. The Germans make Quarktaschen and the Austrians Topfentascherl & # 8230 so their Moldovan origin is clearly debatable. This type of baking came to us on the Austro-Hungarian chain and reached Transylvania, Banat and Bucovina from where they spread to the rest of the country. Unfortunately, in some areas the classic recipes have been distorted and we have come to cheesecakes made of bread-like dough (with water instead of milk, without eggs) and with cheese fillet mixed with traces of sugar without the aromas of vanilla and peel. of lemon. Poor thing.

You can also give these cheeses a more special form of rose & # 8211 see here how.

Or you can use a layered dough with more butter as is the case Viennese cheeses & # 8211 a madness!

Cow's cheese for cheesecakes is a sweet, fatty and well drained whey. No, it can NOT be replaced with ricotta which is urda (a dairy by-product prepared by boiling the whey left over from the cheese). Ricotta is weak and does not have the specific acidity of cottage cheese. If you live abroad and do not know what cheese to buy (Quark, Topfen) or if you prefer to make your own cottage cheese. you can follow this recipe.

From the ingredients below we obtained 12 fluffy cheeses or Moldovan Poale-n brau.
