RECIPE PREPARATION Spicy salad with broccoli:
Today we will cook a salad with broccoli picked from the enchanted garden ... :)
Cut the carrot into very thin slices. Finely chop the onion.
We then put them on the fire, in a pan with 3 tablespoons of oil and 5-6 tablespoons of water.
Heat until the carrot softens a little.
If necessary, we can add 1-2 tablespoons of water.
Add the sliced pepper, the thinly sliced garlic and the broccoli bouquets that we boiled separately in salted water for 3-4 minutes.
Season with salt, vegeta, pepper. Cook for another 3-4 minutes and turn off the heat.
We put everything in a bowl.
Add finely chopped parsley, thyme leaves, and pods
of beans - which I boiled separately in salted water for 8-10 min.
(From the larger bean pods, I only used the beans inside.)
Sprinkle the salad with lemon juice and mix.
It can be served both hot and cold.
Broccoli salad with bacon and spicy vinaigrette
Here is a filling and robust salad, an interesting combination of ingredients with different tastes, flavors and textures, so that each sip is a surprise full of flavor. It cooks quickly, without holding you in front of the stove.

500 g of broccoli
50 g thin slices of bacon
50 g of ripe Telemea cheese, cut into pieces
3 tomatoes, cleaned of seeds, chopped
2 tablespoons fried sunflower seeds
2 tablespoons basil, chopped
1 bell pepper, chopped
2 green onions, chopped
3 tablespoons large and fleshy raisins
1/2 red hot pepper, finely chopped (optional)
2 tablespoons lemon juice
6 tablespoons extra virgin olive oil
black pepper, freshly ground
1 teaspoon mustard
1 clove grated garlic
fresh basil leaves for garnish
Heat 1-2 teaspoons of oil in a large pan. Add the bacon and fry for 2-3 minutes on each side, until golden brown. Drain excess fat on paper towels. After it cools, chop it.
Meanwhile, scald the broccoli for about 60-70 seconds in boiling water, then cool immediately in an ice bath (very cold water with ice cubes) and drain.
Mix in a bowl the broccoli with green onions, bell peppers, tomatoes, hot peppers, cheese, sunflower seeds, chopped basil, raisins, pepper and a pinch of salt. Attention, Telemea cheese is already salty.
Separately mix by shaking, in a jar with a tightly closed lid, olive oil with lemon juice, salt, pepper, mustard and grated garlic. Pour the vinaigrette thus obtained into the salad bowl and mix.
Serve the salad at room temperature, garnished with fresh basil leaves.

Prepare the dressing for your broccoli salad first. Combine all ingredients in a bowl, mix and set aside the sauce.
Then combine the salad ingredients in a large enough bowl: broccoli, red onion, fried bacon, cheese and salad mix (as desired). Mix all the vegetables and pour the dressing over them. Stir and if you want, add raisins. Now you have a sweet and creamy broccoli salad, which has the perfect amount of sauce and is very delicious.

- 1 large broccoli caper
- 200 g of cow's milk

The oven is preheated to 200 degrees Celsius.
The puff pastry is unwrapped and placed directly in the bowl that we will use in the oven. I used a round vessel with a diameter of 23 cm. The puff pastry must be at room temperature when working with it, otherwise it will break.
After we put it in the bowl and cut the excess dough from the edges, we will prick it with a fork on the entire surface of the base and let it cool for 15 minutes.
We will put it in the oven for 10-15 minutes and we do not want this part to grow. If swelling occurs, prick it until it is completely penetrated.
We will wash the broccoli well and open the small bouquets. Put it to boil in salted water for 3-5 minutes.
Remove the dough from the oven and distribute the broccoli bunches evenly on its surface. We lightly crush the telemeau and spread it among the bouquets. We do the same with salted cheese.
Beat eggs with a fork and mix with sour cream. Season with salt and pepper to taste and pour over broccoli and cheese. It will enter the ingredients and fill in the blanks.
Put it in the oven, reducing the temperature to 170 C, and leave it for 40 minutes until it is nicely browned on top.
Cut into slices and serve both hot and cold.
